Homemade Granola

I love to make fresh homemade granola. Its so good to carry in a little baggie for a snack or to put into yogurt. I thought I'd share with you my recipe. This is one of those recipes that you can take the basics and make it your own. You can double it, change it up and all the while get the result you like best for your family.

Dry Ingredients
  • 3 1/2 cups Quaker Oats
  • 1/4 cup flour
  • 2 tablespoons cold milled flax seed
  • pinch of coarse salt
  • 1 tablespoon of cinnamon
  • 1 cup walnuts
  • 1 cup dried cranberries (I soaked these in water until I got ready to use)
  • 4 tablespoons of light brown sugar

Wet Ingredients

  • 1/2 olive oil
  • 1/4 cup of honey
  • 1 tablespoon of almond extract

Mix all dry ingredients together except cranberries. Set aside. Mix all wet ingredients together and pour into dry mixture. Ensure all is moist. Put on to a greased baking sheet in a 350 preheated oven for 15-18 minutes. Turn granola and add in cranberries and brown sugar and continue baking for another 20 minutes. I turn twice within this 20 minutes to ensure my granola doesn't burn. Allow to cool. Store in air tight container.

You can add whatever dried fruit or nuts you like best. Almonds and cashew are really good in this recipe as well.

Enjoy!
