Homemade Salsa
Making homemade salsa is great for many reasons. Not only can you make it to tickle your taste buds, you know exactly what ingredient's are going into it. No added preservatives. We eat salsa on chicken breast, eggs, rice and use it for many dipping options. I use the following ingredients, however, I never measure them. I mix in a food processor until I get the consistency I'm happy with. Refrigerate overnight for best results.
- Large can of diced tomatoes
- Diced tomatoes (1)
- Red onion (1)
- Fresh bush of Cilantro
- garlic salt
- fresh gloves of garlic (2)
- Salt
- Pepper
- Lime Juice
Here are a few other ways we enjoy eating salsa
I hope you all have a fabulous football weekend! I'm so excited! EEEkkk!

There is just something about good ole family recipes. My brother married the woman of his dreams about a year ago. (Pictured below! Yes, they are with child :) Honeymoon does it every time:) With that, we inherited a lot more family and even more family recipes. My brother's mother-in-law makes a mean chicken bake. She passed over the recipe to me and I changed it up a bit.
Ingredients:
Ingredients:
- 4-5 chicken breasts
- can of cream of chicken soup
- 1/2 cup of sour cream (I used Plain Greek Yogurt)
- 1/4 cup of water (I will probably omit this step next time)
- 6 slices of center cut bacon
Directions:
Lay chicken breast in a 9x13 baking dish
Mix next three ingredients together and pour over chicken
Add salt and pepper
lay slices of bacon on top of creamy mixture
Cover with foil
Baked on 350 for 45 minutes, remove foil and bake another 10 minutes (this may very depending on how thick your chicken is.) I used thinly sliced breast. About 1/4 inch thick
We eat this over yellow rice. Cook the yellow rice according to package directions, except use chicken broth instead of water.
Why yes, I dug in and started eating before I took a picture of it plated. Here is whats left!
This dish has such a great flavor. Chicken is very moist and the bacon flavor puts it over the top.
Enjoy!

Building for Relief
WHAT IS HABITAT?
NHFH does not offer short-term housing, rental housing or immediate occupancy.
Nassau Habitat for Humanity (NHFH) is a local volunteer organization affiliated with Habitat for Humanity® International, a Christian inspired ministry whose mission is to build decent, affordable housing in the US and around the world.
NHFH is run by a local board of directors who raise funds; select families, building sites and house plans; supervise construction and administer the mortgages. NHFH began building homes in 1993. In May 2012, Nassau Habitat completed its 31st home.
Homes are built for families meeting the requirements outlined here. Donations and volunteer labor finance construction. The homes are sold at cost to qualified families through an interest free mortgage issued by NHFH.
Habitat families are selected without regard to religion, race, ethnic background, family status or disability.
My daughter had the chance to volunteer and help someone in need. She spent countless hours on her days off building and making a difference. Its always special when you see people helping and volunteering their own time. I'm grateful for community service organizations that put together great programs for those in need.
If you want to see how other folks are doing their part to volunteer actively, I urge you to check out the Advil® Relief in Action program. The campaign honors and supports people who don’t let pain get in the way of helping others. Advil® is also donating to Habitat for Humanity and Wounded Warrior Project® for every bottle sold. Advil® is helping volunteers get the relief they need, and get back to giving back. If you want to share your own story of active volunteerism, post a photo on Instagram, Facebook or Twitter and tag it with #ReliefinAction.
I am participating in a sponsored campaign hosted by Advil®. I received compensation for this post. While all opinions stated are my own, I make no claims about Advil® as a product or its effectiveness.

I love to make fresh homemade granola. Its so good to carry in a little baggie for a snack or to put into yogurt. I thought I'd share with you my recipe. This is one of those recipes that you can take the basics and make it your own. You can double it, change it up and all the while get the result you like best for your family.
Dry Ingredients
Wet Ingredients
Mix all dry ingredients together except cranberries. Set aside. Mix all wet ingredients together and pour into dry mixture. Ensure all is moist. Put on to a greased baking sheet in a 350 preheated oven for 15-18 minutes. Turn granola and add in cranberries and brown sugar and continue baking for another 20 minutes. I turn twice within this 20 minutes to ensure my granola doesn't burn. Allow to cool. Store in air tight container.
You can add whatever dried fruit or nuts you like best. Almonds and cashew are really good in this recipe as well.
Enjoy!
Dry Ingredients
- 3 1/2 cups Quaker Oats
- 1/4 cup flour
- 2 tablespoons cold milled flax seed

- 4 tablespoons of light brown sugar
Wet Ingredients
