Buffalo chicken lovers let your taste buds dance with this wonderful concoction I threw together.

I know Super Bowl is over and if you were rootin for the Broncos (like me), you are glad to have it behind you. No matter how bad the game, the food is always a positive experience. This recipe would  be a great addition to those favorite foods shared with your friends and family. It's also a great quick dinner for any week night.


Grocery list:
1- traditional rotisserie chicken
1- can of tomato sauce 8 oz
1 - cup of franks buffalo hot sauce
Blue cheese crumbles
Chives

Chop or shred your chicken.
Mix together chicken, tomato and buffalo sauce over medium heat.
Simmer until reach desired temperature.

Scoop a heaping serving onto your toasted bun and top with crumbled blue cheese and chives.








How's that for a speedy dinner? You can always substitute the chicken with ground turkey also.

Homemade Chocolate Cake

Chocolate, who doesn't like a nice piece of homemade goodness? My husband! He claims to not like chocolate. Lately, I have found him in the candy drawer snacking on…Chocolate.

I decided to make a cake from scratch. I haven't ever made a chocolate one, so I searched and searched for a recipe that sounded appealing to me. 

I found this one and it was a go! What cake isn't good that calls for a cup of your favorite coffee? 

However, next time I make it, I will definitely have some adaptions. While the cake was most tasty, I would have preferred less of a buttery taste in the icing and I would have used about 1/4 less of the cocoa.

Homemade Coffee Cake (Grinding my flour)

A while back I was introduced into a healthy way of getting my daily intake of whole grains. I purchased a Wondermill. I started grinding my own flours. I used it for a baking a couple of loaves of bread and then tossed it into the pantry and didn't touch it for quite a few months. 

Store bought processed flours and sugars have so many additives and preservatives, that when you start studying them, it's scary! While they are very good and convenient, they aren't good for you.

While laying in bed one night I decided to watch some learning videos so that I could use my mill to it fullest capacity.  That's all it took. I'm baking breads, cakes, muffins, grinding my own popcorn to make corn meal. And it's all so healthy for you. 

Once I can stand on my feet for a period of time (I'm out of work on disability), I'll be bringing you a few recipes that I came up with as a spin off to the originals.

For this coffee cake recipe, I didn't use any kind of processed sugars. I used a product called honey granules and sucanat. These sweeteners do not contain additives. Honey granules and sucanat is used one for one in place of white granulated and brown sugars.

Tip:
white sugars replace with honey granules 
brown sugars replace with sucanat









No Bake Energy Balls

Good Morning,

I thought I'd share with you a popular commodity around my home. I made these a while back and you can read about it here if you missed it.

I thought I'd throw some together being everyone was asking me to whip up something semi healthy.

Ingredients:
Rolled Oats - uncooked
Honey
sweetened coconut
chocolate chips
peanut butter  - crunchy
vanilla
Ground flaxseed

I honestly do not measure. I just make sure the mixture is moist enough to roll into balls and that they aren't too dry to eat. Increase honey and peanut butter as necessary.

The term 'peace' originates most recently from the Anglo-French pes, and the Old French pais, meaning "peace, reconciliation, silence, agreement" 

Deuteronomy 31:8 is a verse that has been implanted in my mind the last few weeks. When I found out I needed to have another surgery to (hopefully) correct my problem, my anxieties were through the roof. After all, I had just came out of a surgical procedure back in August. It had been only 5 months and now I have to go back to a place where my anxiety and fears run rancid. Why me? I'm one of those worry warts that worry about everything. Why am I having to go through this once again? 


Then, I started to to question myself. Why not me? I'm not this special person that deserves to be exempt from trials & tribulations. The one thing I started to dwell on was the peace that I had the first time I was told I needed surgery. But, was that just a coincidence that I was calm or was the Lord showering me with his Holy Spirit that never left my side? As the days started approaching, I was reminded of that special "peace" The Lord gave me. Will he give it too me again or was it a one time occurrence? I knew I had many people praying for me. Church family, my Pastors, their wives and my family. I couldn't find myself getting worried. My Pastor always says if you give it (your burden, problems, fears) to The Lord completely, you will not be able to worry about it. The Lord will give you that perfect peace in the midst of the storm. I did just that. The Lord completely took over my fears and anxieties. I felt such peace as I entered the hospital that morning. The Lord never left my side. He went with me through it all. It doesn't matter if its the first time or the fifteenth, when you give it to the Lord, He will surely be there!


What did I do to deserve this wonderful gift of peace to carry me through my trials in life? I didn't try to carry this heavy burden alone. I gave to it up to someone who was capable of handling it! After all Deuteronomy 31:8 tells us that "the Lord will go before us, he will not fail us nor forsake us." If the Lord is already there, then why should I be afraid? I'm so thankful for the peace He gives in time of need. I wouldn't trade it for anything this old world has to offer. 



Praise Him in the storm. He's opened armed and ready to hold you tight. Give it completely to Him. Allow the Holy Spirit to move through you as He promises he will. I will leave you with this song of hope. 1 Peter 5:7 - Casting all your care upon him; for he careth for you.


As I circle back to the meaning of peace from above, "to be quiet, in agreement" sticks out in my mind as I have to "agree" to allow The Lord to go to work in my life.

Valentine's Mantel 2014

I love that less is more in 2-0-1-4! It's also the simple things that make a difference. I love that America is agreeing with me on this. Less is More!

I thought I'd throw together a little valentine decor and add a few touches of the season to my mantel. I kept it simple this year. As I look back at last year's mantel, I'm in shock of how much my tastes have changed.




I used some wrapping paper turned inside out and wrapped a few books I had laying around. I finished it with once simple piece of ribbon to tie in a little color. 




I searched online to find a printable to use in my frame to draw in the pattern of polka dots. Not sure what it is lately about polka dots, but I'm in love!


I got all three of these metallic finish vases at Target on clearance right before Christmas.







I hope you have a wonderful Valentine's Day. Don't wait until Valentines to show your love, express it each day! For this is the day that the Lord has made!
