My oh my, where do I begin? I usually dread talking about or better yet actually eating healthy meals when I have to prepare them. My husband and I have recently started the Whole 30 challenge. I find that it has many meal options. I'm not one to prepare three meals a day, but let me tell you, I certainly have been utilizing my kitchen the past couple of weeks. We have really enjoyed the possibilities and find that we are eating foods we wouldn't normally have around. Its been fun to see the color on our plate. Below are some ideas that I cooked for either breakfast or dinner. For lunch, we opt to enjoy a salad that I prepare the night before. Breakfast I throw together some strawberries, blueberries, walnuts or almonds.
Egg whites w/ spinach, chicken sausage, broiled tomatoes, topped with homemade salsa
Baked chicken with garlic rosemary, fresh brussel sprouts
Egg whites, salsa, sautéed peppers and onions
Broiled Tilapia, steamed broccoli, avocado
Sweet potato hash with onions, avocado, turkey burger
