Banana Nut Bread Recipe

Don't you just love those evenings where you can enjoy your family and a nice loaf of banana nut bread? My husband returned home after being gone for a few days and I decided to whip up something sweet. We have been doing really well with eating whole foods and watching what we ingest. So, I decided to reward him ;). Isn't that so nice of me? He thought so; he devoured three pieces right away.

Banana Nut Bread Recipe
3 ripe bananas
1 cup of sugar (I have been using Sucanat, but didn't in this recipe)
1/2 cup butter, melted
2 large eggs
1 teaspoon vanilla extract
2 cups whole wheat flour (this makes it a little darker, but it was so moist)
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 chopped nuts

Mash bananas with fork leaving some chunks with texture, place half of them in mixer with your paddle attachment. Set aside other half.

Add sugar to your mixer and whip together for about 3 minutes. Add, butter, eggs, vanilla. Mix together until combined. Add the rest of your ingredients ( flour, soda, salt, nuts and remaining bananas) Do Not over mix.

Pour into a greased loaf pan. sprinkle with remaining nuts. Bake of 350 for 50 minutes to 1 hour.
